Dark Chocolate Peanut Butter Cups

Peanut Butter Filling:
1/4 cup soft dark brown sugar
2 cups confectioner's sugar
1/2 stick butter, softened
7 ounces smooth peanut butter

Chocolate:
10 ½ Ounces Dark Chocolate

Directions
In a food processor, add all ingredients for peanut butter filling. Process until the mixture has a sandy texture. Form 1 teaspoon-flattened spheres of peanut butter filling, place on parchment paper. Place 48 mini muffin liners in mini muffin tins. Gently melt chocolate in a double boiler, stirring frequently. When chocolate is completely melted, add ½ teaspoon of melted chocolate to the muffin liner. Place a peanut butter sphere into each muffin liner. Spoon teaspoonfuls of the melted chocolate onto the top of each of the peanut butter spheres. Let set in the refrigerator, for 30 minutes. When chocolate is solid, remove from refrigerator.
