Grilled Artichokes with Garlic Aioli Sauce

Artichokes

Grilled artichokes are easy to grill and pa

ir nicely with Sauvignon Blanc. Serve as an appetizer or as a side dish with grilled fish or chicken. Bon Appetite!


6 Artichokes
2 Minced Garlic Glove
Lemon Juice from 1/2 Lemon
Olive Oil
Salt and Pepper

Garlic Aioli Sauce


2 small roasted minced garlic cloves
1 Egg Yolk
1/2 Tsp Water
1 Cup of Good Olive Oil
1 Tsp Lemon Juice
1 TBSP Fresh Chopped Parsley


Cut thorny tops from the top of the artichokes using shears or sharp knife, trim stem with knife. Steam artichokes for 15-20 minutes with garlic, lemon juice and water. After steaming, cut artichokes in half lengthwise, clean center, brush with olive oil and add fresh ground salt and pepper. Grill over medium heat with the cut side up for 10 minutes and then flip the artichokes over and grill for another 5 minutes.

Whisk together minced garlic, egg yolk and water. Mix well. Slowly add the oil into the egg yolk mixture, whisking constantly. As the egg yolk absorbs the oil, the sauce will thicken and lighten in color. Continue to add oil a little faster, whisking constantly until all the oil is absorbed into the mixture. Whisk in Lemon Juice. Taste and add salt and more garlic as desired. Top with Chopped Parsley.
